Trail Mix Cookies













    Today is all about procrastination. It is cold. The hot water pipes in my house, in their typical spirit of perverse defiance and tenacity in the face of opposition, have frozen despite being left trickling overnight. I was looking forward to a visit from some family members which was cancelled due to illness (one of the less-known hazards of going to church: tell your friends). I had taken the day off in anticipation of spending it with my visitors. Logically, I should use the day to catch up on school work.


    That’s silly talk.    
                      
    Since I don’t seem to be getting much done in real life, I thought I might devote some effort to something, namely this sadly neglected blog.

    If you are, like much of the United States, being crippled by Frozen-levels of cold, the prospect of some toasty cookies might be a welcome one. These are trail mix cookies, because let’s be honest here, no one is going hiking in this weather. Why not use all that energy in the absence of actual physical activity to bake, and toss that energy-sustaining blend in some cookies? It’s the right choice. Also, warmth points for running the oven.

Trail Mix Cookies
                 
1 tbsp vanilla
¾ cup honey
1 tbsp molasses
¾ cup melted coconut oil, or oil of choice
2 ½ cups whole-wheat flour
½ tsp baking powder
¾ tsp baking soda
1 flax egg
1/3 cup water
½ tsp salt
1 tsp cinnamon (optional)
1 ½ cup trail mix of choice


Preheat oven to 375.

Cream oil, vanilla, water, molasses, and honey. Now add in everything else. Drop onto cookie sheet or roll into balls, and bake for 8-10 minutes. And stay warm!
