You're probably thinking one of two things - "what is funfetti doing on a salad", or "oh, this poor vegan, she's been eating vegetables alone so long she thinks they're fun. And confetti-like."
My advice to you, in either case, would be to just stop and eat this delicious salad - complete with creamy hummus dressing! - and look at a ton of pictures I took of said salad, because it's amazing and I want to remember it forever and ever. Ready?
So far, I have made this salad as a meal and as a side with two different dressings. A great addition to the toppings I already have pictured are celery and radish, by the way, but I was out so that was a no-go.

Funfetti Salad
3-4 leaves lettuce, shredded
1/4 green apple, chopped
1 small carrot, diced or grated
1-2 strips red bell pepper, chopped
1/4 cup raw shelled endamame
2 tsp sesame seeds
1-2 tbsp sunflower seeds
Throw everything in a bowl. Pour dressing on top and enjoy. (Recipe below. For dressing, not enjoyment. That's all you).

Creamy Hummus Dressing
1-2 tbsp hummus
Juice from .25 lemon
1 tbsp water
1 tsp olive oil (optional)
Seasoning (I used salt + pepper + a dash onion powder)
Whisk ingredients together, thinning with water as desired. Taste and adjust, adding more lemon juice to increase acidity or water if the lemon is too much. You don't have to add the olive oil, but I think it gives it that special umami.
If "creamy" and "hummus" are not so much your thing, try this:
Lemony Salad Dressing
Juice of .5 lemon
2 tbsp oil (I used 1 olive + 1 canola)
salt + pepper (lots of pepper!)
2 tbsp water
Garlic + onion powder
Whisk all together. Makes enough dressing for a large salad.
Salad + homemade iced coffee. What could be better?
